Set up a tripod and use a remote to capture the looks on faces as the game progresses. What is Groundhog Day and how did it get started?
Groundhog Day is an annual celebration of Puxsutawney Phil’s famed weather prediction. The event is held on February 2 at Gobbler’s Knob in Jefferson County, Pennsylvania. Since 1887, many people have gathered at the Gobbler’s Knob to see first hand if Phil sees his shadow and if six more weeks of winter weather are in store.

Groundhog Cookies Recipe

2 cups sifted flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cloves
1 1/2 teaspoons cinnamon
1/2 cup soft butter
1 cup sugar
1/2 cup molasses
1 egg yolk
1 egg, slightly beaten
Currants or raisins

Sift together first seven ingredients. Set aside. Cream butter and sugar until fluffy. Blend in molasses and yolk. Stir in flour mixture and mix well. Form into a ball.Wrap in plastic wrap. Chill overnight, several nights or freeze. Place small amounts of dough on a sheet of plastic wrap, and cover with plastic wrap.

Roll 1/8 inch thick. Cut out cookies with lightly floured cutter.Place cookies on greased baking sheet. Brush with slightly beaten egg. Decorate with currants or raisin eyes. Repeat until all dough is used.Bake 8 to 10 minutes in a preheated 350-degree oven. Cool slightly before removing from cookie sheet. Makes 72 or more medium-sized groundhogs.

Just because you have an allergy doesn’t mean you should have to miss out on the fun! Try a gluten free version!

Here is a revised Gluten Free version I made:

Gluten Free Groundhog Cookies

2 cups mixed all purpose gluten free flour (If your GF flour mix does not have xanthan gum then add 1/2 tsp. to this recipe)
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon gluten free baking powder
1 teaspoon ground ginger
1 teaspoon ground cloves
1 1/2 teaspoons cinnamon
1/2 cup soft butter or non-dairy alternative, room temperature (e.g. Earth Balance Buttery Sticks)
1 cup sugar (Try Beet Sugar if Allergic to Cane Sugar)
1/2 cup 100% pure (or gluten free) molasses
1 egg yolk (or egg substitute like Ener-G EggReplacer)
1 egg, slightly beaten (or egg substitute like Ener-G EggReplacer)
Currants or raisins

Sift together first seven ingredients. Set aside. Cream butter and sugar until fluffy. Blend in molasses and yolk. Stir in flour mixture and mix well. Form into a ball. Wrap in plastic wrap. Chill overnight, several nights or freeze. Place small amounts of dough on a sheet of plastic wrap, and cover with plastic wrap. Roll 1/8 inch thick. Cut out cookies. Groundhog Day is a popular observance in many parts of the United States and in Canada on February 2 each year.

This holiday can me a fun time for families and kids, with only a small amount of planning. So you are in the right place!

If you read this article then basically you can have some very good helps, background, resources and some ideas to turn this often overlooked holiday into a fun and memorable day! Maybe even turning this day into a family tradition!

What is Groundhog Day?

Although in the US some states have adopted their own groundhogs, the official groundhog for the US, is Punxsutawney Phil. This groundhog lives at Gobbler’s Knob near Punxsutawney, Pennsylvania.

For Canadians, a festival is held in the town of Wiarton in Bruce County, Ontario, to honor Groundhog Day and they have their own groundhog, Wiarton Willie.

In the US, people come in scores to visit Punxsutawney Phil, wait eagerly, even camping days in advance to see the small groundhog emerge from his burrow.

The groundhog will check for his shadow and either go back in or stay out. If Punxsutawney Phil did see his shadow, then it is predicted that there may be six more weeks of winter.

The Inner Circle generally organizes an annual function on this occasion to honor Phil. He gets a lot of media attention as well. People rejoice when they hear it is time for winter to end and celebrate by eating sweets and singing and dancing.

Punxsutawney Phil lives in his burrow on Gobler’s Knob, Punxsutawney in Pennsylvania, for a short period preceding the 2nd of February. Otherwise, he lives downtown with another groundhog called Phyllis. On the 2nd of February, Phil comes out from his burrow and looks for his shadow. If he sees his shadow and goes back into the burrow, then the United States will have an extended winter of six weeks more. But if he cannot see his shadow, and he remains outside, it means winter will soon end and spring will arrive very shortly. He communicates this to the president of the Inner Circle, the group of people who look after him. He does this in a secret language called Groundhogese, which apparently only the president of the Inner Circle can understand.

When is Groundhog Day?

To have some fun with Groundhog day you need to plan for Groundhog Day, at least a little bit… like what is the date?

Background History of Groundhog Day:

Now that we know when Groundhog Day is observed, how about getting to know a little about some background history. It will help you understand why this fun holiday came about.

Thousands of years ago when animalism and nature worship were prevalent, people in the area of Europe now known as Germany believed that the badger had the power to predict the coming of spring. They watched the badger to know when to plant their crops. By the time the first German immigrants settled in Pennsylvania they probably understood that this was not true but the tradition continued.

Unfortunately there were not many badgers in Pennsylvania so the groundhog substituted the badger. Tradition has it that if the groundhog will sees its shadow on February 2 it will be frightened by it and will return to its burrow, indicating that there will be six more weeks of winter. If it does not see its shadow, then spring is on the way.

Punxsutawney held its first Groundhog Day in the United States in the 1800s. The first official trek to Gobbler’s Knob was made on February 2, 1887. It is said that Punxsutawney Phil (the groundhog) was named after King Phillip. He was called Br’er Groundhog prior to being known as Phil.

• Take photos of Getting the Decorations out and Decorating the house inside and out. Don’t wait till the whole house is decorated to take photos! This year, start getting snapping those photos of getting the Holiday Lights and Decorations out of the attic, garage, or basement. Start scrapping the story at the beginning of decorating! Then take more photos as you string the lights on the eaves of the house, or putting up the garland and wreaths around your house. Take photos of the foyer, staircase, dining room or any other room you’ve decorated for the holidays and take the photos as you decorate and then the end product too.   Photograph the mess of gift wrap, strips of curly ribbons and crinkled tissue papers on the floor, the children playing with their toys, and finally the clean-up and empty tree!
  
  Digital Scrapbooking Tip: Save the wrapping items and scan them use them to use as digital embellishments for your digital scrapbooking pages. These items will definitely be items of interest as they might match the photos too.
• Scrap the Favorite Holiday Treats, Breakfast, Dinner, and the Recipes too! Photograph the Wonderful Tastes of Christmas! Include some of the recipes into the Christmas scrapbooking projects.

So in this article we will give a few more tips for getting those great photos for your digital scrapbooking projects from all your holiday events.

Many of the photo examples in this article will be photos of the winter holiday season, but these tips will work on any holiday ~ in fact, they are great for everyday photography too!

Just a reminder are starting this article where the last 2 articles – (Tip 1 through Tip 5) left off!

Tip 6: Look for the Reflections in the Holiday, and Capture both the image and the Reflection.

One the quickest and easiest ways to add an artistic touch to your holiday photos is to focus on capturing reflections in any place it might appear.

For example in San Diego in December they have a boat parade in December, it is fun to capture the boats decorated with lights but it is nice to make sure and capture the reflections of the lights in the water too!

More reflections in the water are extra fun with these light from the boat shining in the water. Then adding such photos make a extra fun digital scrapbooking page

This holiday season besides reflections in water, you can look for reflections in puddles in the street,  or in ice, ice sculptures, or even in Ice sickles

Keep a look out for interesting splashes of color, reflected from Christmas lights and other holiday decorations too.

Reflections also are great in glass, mirrors, and other lights. Like these New Year glasses below filled with cheer and reflections. This photo could work great in a New Year’s digital scrapbooking project too!

Candles also are a great source of reflections, but really reflections can happen in many places so keep your eyes open for the that photo shot that has reflections in it!

Reflections can be somewhat focused like the images above or they can be somewhat out of focus, just capturing the reflections.

Tip 7: Capture Just the Reflection

The Holidays can be a perfect source of abstract images.

The out of focused or abstract photos that suggest the essence of the holidays without being direct and explicit, because the photo captures reflections.

With capturing the “Just the Reflections” your photos can create a great mood for your Digital Scrapbooking Pages and projects

Take a look around this holiday you might be surprised how many reflections you can find and how many creative photos you can capture!!!

Tip 7: Shoot Photo First, Ask Question Later!  Take candid photos during the holidays. The posed photos are fun, but you can get some great photos if you take random, candid shots too!

Unlike posed portrait photos, with the candid photo, the photographer doesn’t get to direct the person being photographed. The real skill of a great candid photographer is being patient, watching, observing and really just waiting for the perfect moment when the person(s) and nature comes together for the perfect photo!

For example, taking candid shots of a child opening a gift – or playing with a gift for the first time. People having fun at a New Year party like the photos below.

To catch those very special candid shots by being alert and ready! When the photo op comes up, then you have to have your camera ready to fire off and catch the shot! If you think a good picture might be coming  then start taking the photos and see if you can capture the event as it is happening and if you have a camera positioned, set up and ready then you should be able to get some treasured candid photos! A fast shutter speed can also be a helpful way to have your camera set up and ready to go too!

Exercise your powers of observations. Wait for the right moment and learn to anticipate what might happen, and then take the photo when it does happen!

It is fun to take the photos using these tips and make digital scrapbooking pages with them!

Holiday Rolls a Way to Scrap Recipes to Save them for Family and Friends

What would Thanksgiving be without homemade rolls? For me the rolls are my favorite part of a holiday dinner.

I loved them and my mother made great rolls while her children were growing up but at that point in my life I didn’t want to learn how to make them and so…..I didn’t.

A few years later I really regretted it because my mom’s health had deteriorated to the point that she couldn’t bake anymore and couldn’t show me how to bake yummy rolls. Now I had the desire and no one to show me that is until I met my friend Janette.

Janette is an older woman that took me under her wing and looked out for me for a few years when my children were little and I had all of the challenges that young motherhood brings.

One of the many things that Janette taught me was how to make her Parker House Roll recipe.

It is so much easier that I had imagined and I would love to share this recipe with any of you that may need a fabulous roll recipe that you can be confident will produce beautiful rolls.

I used to just save my recipes on handwritten cards – but have since realized that this type of keeping a recipe will probably over time be lost.

Instead I have decide to take my favorite recipes like this Holiday roll recipe and scrap them!

If I scrap them and put them in a recipe album it makes it easier to pass them on to my children or give the recipes to family and friends

I can add photos and scrap pages with the whole recipe,  and put on a recipe like the Holiday Rolls. Another way is to take photos of each of the steps and scrap the information on how to make the recipe step by step too!

The nice part is since it is digital, I can make it once and give it to as many people as I like! I can email my digital scrapbooking recipes to everyone, or I can print out copies for family and friends too!

It is easy to make lasting memories and keep your recipes preserved when you digital scrap them!

One digital scrapbooking kit I like to use for Thanksgiving recipes is the Fall Foliage Digital Scrapbooking Kit 2 because it comes with digital recipe cards, a digital pen, and fall embellishments like colorful leaves and fall colored digital papers. This is the kit I used to scrap the recipe pages on this blog.

Holiday Roll Recipe

Here is the recipe and the process for making the rolls that make my holiday dinner special.

Mix the following ingredients in a large bowl, I use the large Tupperware bowl

3 Cups of Milk
1 Cup of real butter (it is important that you use real butter)
Microwave 7-8 minutes or until butter melts
Add 1 more cup of milk to the hot mixture
1 Cup Sugar
1 Tablespoon Salt

Mix well and Dump 6 Cups of flour in the liquid mixture. Make a well with a spoon in the flour and add

4 eggs and 3 Tablespoon Quick Rising Yeast so that they rest in the flour

Begin Mixing (you may use a regular hand mixer)

Continue to add flour up to 12 Cups until you have a nice consistency. When you have added about 9 cups of flour you might want to mix with a wooden spoon. When the dough is mixed well, let it sit and rise until double. This normally takes 1 ½ to 2 hour. Punch the dough down and raise another 45 minutes to 1 hour.

On a clean cutting board or counter top sprinkle a thin layer of flour. Divide the dough into three sections and roll the dough out one section at a time and cut the dough out in a circle shape. I use a large plastic cup or glass mug to cut my rolls out. While you are cutting the rolls out, set a large cookie sheet on the stove and melt 3 Tablespoon of real butter on a low heat. Then when you are finished cutting out the dough take each circle and set it in the melted butter and flip it over, fold it in half and flip it over again. Form the dough into a crescent shape and pinch the dough shut by pressing down with your fingers. Lay the crescent shapes so they are touching each other slightly on the sides, front, and back. I lay 4 rolls across and 7 rolls down. This recipe makes 5 dozen rolls. Leftover rolls freeze nicely to use with a future meal.

Let the dough rise about 1 hour and bake on 400 for 11-13 minutes.

Use this Recipe to make a variation – Orange Rolls:

I also enjoy Orange Rolls. To make this option, grate an orange peeling into a bowl and add a half cup of white sugar.

Make the same as you would the rolls but before folding the roll in half place a small teaspoon of the sugar mixture on the roll.

These are good as a treat or a dinner roll.

Use this Same Recipe for Even More kinds of Holiday Rolls!

One of the best things about this recipe is that there are so many optional treats that you can make with the dough.

My favorites are Brown Sugar and Butter cakes that I serve with whipped topping on Christmas morning and Orange Rolls that go great with any celebration dinner.

After the circles of dough have been cut out in the basic roll recipe, you can either mix the dough back together so that you can make more rolls or you can set the scraps of dough off to the side to make brown sugar cakes for breakfast or a treat.

Spray Cooking Spray in a pan and lay the sections of scraps of dough together like a puzzle. Make a thumbprint in the pieces and dot the scraps with a small piece of butter and a dab of Brown sugar. Let rise and bake on 400 for 11 – 13 minutes. Served hot with Whipped Cream on top.

These are an especially wonderful treat to share with your friends and neighbors on a cold winter evening.

You can even make this same recipe into cinnamon rolls, just  by adding melted butter, cinnamon sugar, raisins and nuts when you first roll out the dough, but don’t cut into circles. Then roll the dough up, and cut into 1/2 inch slices. Put in each slice in a pan like the basic roll recipe and then let raise and bake.

Let’s Talk Turkey! Digital Scrapbooking the Turkey Experience!

As we look forward to Thanksgiving coming up soon, it is time to think about the main dish – the Turkey!

I remember my first turkey experience. It happened shortly after I  moved away from family to California – so out of necessity I got to cook my first turkey for Thanksgiving.

I was pregnant with my second child and only about a week away from delivery and had been put on bed rest, so while I was flipping through the channels on the TV I came across a cooking show with Julia Child talking about a great way to cook a Turkey for Thanksgiving.

I liked the way she was doing it because it seemed easy because this recipe she was demonstrating did not include stuffing inside the Turkey. The whole idea of preparing the turkey with stuffing cooked inside the turkey seemed overwhelming for my first Thanksgiving Turkey alone! I didn’t want my turkey undercooked because of the stuffing. Also I didn’t want the stuffing soggy because of all the turkey juices. And then there was getting stuffing right like trying to stuff the turkey when the stuffing was cool so the bacteria wouldn’t grow – this scare was all over the news and air waves at time – scaring young cooks everywhere – or at least me!

Julia Child’s recipe (best I can remember how it went) – put butter under the turkey skin (butter of course – it is Julia Child after all!) Next take sliced oranges, apples and onions and put them in the cavity instead of stuffing. The stuffing was cooked separate in a casserole dish instead! This let me deal with the turkey and the stuffing each on their own terms – this made it manageable for me! To my surprise all the fruit baked with the turkey made for the most tender and juicy turkey I had ever tasted…not bad for a first try! Also, the fruit flavored the turkey with a very interesting and delicate, secret flavor that make it stand out from other roasted turkeys I and others at my dinner had tasted. This made my my turkey a very memorable and much talked about turkey as I don’t think as many people use this method so the turkey stands out as something wonderfully different from the run of the mill roasted turkey recipes!

Over the years I have modified the recipe, one of the first things I took advantage of was the Turkey Baking bag – it holds the juices in even more, and you don’t have to baste the turkey and the clean up is a breeze. You can prepare the Turkey in the bag the day before, with all the fruit and then just pop it in the oven on Thanksgiving, sit back enjoy the day! This was a big plus for me, no fussing, just relaxing!  During the last 30 years, I have added a few more things inside the Turkey beside  just the apples, oranges and onions, I now put some fresh cranberry and fresh herbs too! It always seem to turn out great year to year and I love the broth to make gravy from that has the hint of herbs and fruit!

So last a few years ago it came full circle as I went to the home of my daughter and her husband for Thanksgiving (the daughter I was pregnant with when I cooked my first turkey).

She  was cooking her first Turkey and had been so nervous about it that she had practiced the week before on several chickens to make sure she could get it all right before we showed up.

Of course, her first Turkey was wonderful and she had done a great job and we had a wonderful meal and terrific time! She reminded me of my first turkey cooking experience and it was fun to see her wonderful cooking accomplishments that day.

These are the kind of of things that need to be recorded and scrapped to keep the memories alive. I am so glad we took lots of photos of her first Turkey so she can show her children when they cook their first turkey too!

These events are to precious to just get lost in the closet or worse yet forgotten on some computer disk to be lost forever!

When these photos are taken and scrapped and turned into albums or other digital scrapbooking projects then they can be remembered and shared.

Also when cooking is involved it is wonderful to keep those recipes written down and shared. For example my daughter’s husband came up with a wonderful turkey gravy recipe for that thanksgiving dinner, but a year later when I asked for the recipe the exact ingredients and amounts had been forgotten! Especially sad as the recipe didn’t involve any flour or cornstarch to thicken it and it was the best turkey gravy I had ever tasted!

So we have all learned — to cook with a pen and note pad now! We write down recipes as things get made. Then later we type them up and add them to our digital scrapbooking pages, and put them in a binder to use later!

We also make email versions of our scrap pages and email them to family and friends. It is a way to share our recipes, events and scrapbooking pages too!

November, a Month of Gratitude for My Son’s Scrapbook Project:

November, the month of gratitude has arrived. I find myself in an all too quiet house reflecting on the memories of the past year, which by the way, has been anything but quiet. I have so many fun memories to think about. Many of which include my eighteen year old, senior in high school, son. So if you are following the scrapbook pages that I am making every month for my Senior, I have decided to make a scrapbook page for him to remind him of the things he is, or should be, grateful for this year as the theme for the November pages in my scrapbooking project.

My son doesn’t know I am making a scrapbook for him as a gift. I can’t wait to surprise him with it and I get more and more excited every month as I create the pages. So to keep it a secret, I tell him when I take photos that they are for the blog! … well, they are … see the photos in this blog!!! But I don’t tell him I am also making a special surprise scrapbook of his senior year with the photos!

But this month is different, as I take pictures of him, he keeps giving me grief about it. “Oh, mom, another picture for the blog, please mom no, this is stupid.” So when I give him these pictures and he finds out why I was taking pictures of him, I’m sure we will get a good laugh out of it.

Some of the great pictures for this month will include various pictures of him with different family members. I will put some photos of him as a senior too.

Other pages I will make as soon as I can get the photos are of these things he loves and is grateful for like: the wrestling room at his school, it is his “Tera-Bithia” so to speak so I will include a picture of that. He truly enjoys that mountains that surround our area and goes as often as he can with his friends to spend a night out in the open air under the stars, so I will take a picture of the mountains. Of course, I want to include some pictures of his closest friends. I will also include a picture of the car he bought at the beginning of this year that now has been window painted by the cheerleaders in the school colors.

One scrap idea to make ordinary photos seem more Fall like; is to use some Fall brushes to decorate the photos too!

Just load a brush set into Photoshop or Photoshop Elements and “stamp” the brushes on the photos that I want to look more decorated!
