Cooking Up Fall Friendships and Digital Scrapbooking Recipe Books
Now that the kids are in school I have a little extra time on my hands. The Fall weather tends to get me in the mood to bake so have been thinking about my favorite fall recipes and I thought that you all might enjoy baking up a few of my favorite fall cookies also.
My absolute favorite recipe is a Pumpkin Cookie. The reason it is my favorite is because it is so easy that it only takes a minute (literally) to
mix together. All you do is take a white, yellow, carrot, or spice cake mix out and put it in a bowl and mix 1 small can of pumpkin into it. That’s it, no eggs, no oil, no mess. I love chocolate chips so I throw some of them in and occasionally I mix some walnuts in. Then you spoon them out onto an ungreased cookie sheet and bake them for about 7 minutes at 350 degrees. In minutes you have the perfect fall cookie. This is also a low fat recipe (without the chips and nuts of course).
The next recipe is really simple too. I use a Deviled Food cake mix and add two eggs and 1/3 cup of oil. I roll the dough out into small balls and bake for 5 minutes at 350 degrees. When they have cooled I frost one cookie with homemade or store bought white frosting and top with another cookie. Kids love these fun cookies and they are so easy and mess free that even the smallest children can help mix them up and bake them.
One more cake mix cookie that is so much fun is the Confetti Cake mix. Just mix one box of this cake mix with two eggs and 1/3 cup of oil, spoon out onto a cookie sheet and bake for 5 minutes at 350 degrees. You will have the yummiest, colorful cookies that you will love to share with you family. For a Halloween variation, you can even decorate these cookies to match a Halloween theme by using orange frosting, and orange and black confetti toppings, and put it in a fun Halloween dish to serve it or give it away!
When it gets colder my neighbors tend to stay inside and I miss visiting with them. So, I make these quick cookies and deliver them myself. This gives me a great way to renew old friendships and make new ones. So if you are in the fall baking mood, give this idea a try it will brighten up your day as well as many others.
I also like to make the cookies look really nice on a seasonal plate and take a picture. I make a scrapbooking page with with a photo of the cookies, and the recipe for these Halloween cookies too. I can even take the same recipe and just change the digital scrapbooking papers and embellishment and give some cookies away to other friends and family for other Fall or Thanksgiving events!
